Healthy and tasty mayonnaise is easy to make and takes only three minutes with a stick blender. The advantage of making your mayo is that you can use high-quality oil, like avocado or high-quality olive oil- and also, by avoiding sugar, you can have healthier mayo with less calories. So, make your own homemade mayo with ingredient that you already have in just couple of minutes.
Classic mayonnaise Ingredients
- 1 egg
- 1 tablespoon of fresh lemon juice
- 1 garlic clove
- 1 teaspoon sea salt 1 teaspoon of mustard
- 6 tablespoons of oil, or as needed
How to make mayonnaise
Use the jar or cup that came with your immersion blender, crack a whole egg into the jar, and add vinegar, lemon juice, mustard, and salt. Add the oil last and start blending; make sure you keep the stick blender firmly in the bottom for the first 15 seconds.
It will create a vortex, gradually pulling the oil down into the whirling blades because it is not as dense as the other ingredients. When you stick the blender blades down into the cup, they will be in direct contact with the egg yolk, water, and mustard. While it forms, tilt slowly and lift the immersion blender’s head to emulsify all of the oil. If you don’t have a stick blender, use a food processor.
If your mayonnaise is watery and runny, it hasn’t emulsified properly. Keep blending until you reach your desire constancy.
Homemade mayonnaise can be kept in the refrigerator for ten days.
